Emily, our talented teacher, demonstrated step by step how to make a two-crust apricot-cinnamon pie with lattice. I didn't realize that there is some science for a perfect pie crust by adding certain ingredients in order. After we broke off in groups, rolled out the dough and learned more secrets to successful pie making such as the assembly of pie, crimping and egg washing. There were only three others in class so it was quite intimate. I highly recommend going to Mother Moo if not for a pie baking class, you must try their ice cream.
